1978, Gary Casson has won
numerous awards for his Jamaican

Gastronomic Academy. Gary Casson
came to Jamaica in 1993 and
worked at Morgan's Harbor in as
specialty chef for several

Salisbury College of technology
in the United Kingdom. The

The Jamaican cuisine at Cassons
restaurant and bar in is
designed to stimulate all taste
buds. Though the restaurant
serves mainly Jamaican fish
recipes the owner also reverts
to several English recipes, such
as pies ranging from kidney pies
to steak pies in Guinness and
mushrooms. The restaurant was
built on the love of fish
recipes by the head chef Gary
Cassons because fish can be
prepared in a variety of ways.
The chef has now worked in two
the of the top restaurants which
include both the Morgan’s Harbor
restaurant and his very own.
However this head chef has had
an illustrious career Gary
Cassons worked at Casa Del Maco
off the Mediterranean coast in
Spain, where they specialized in
international cuisine. The
restaurant does offer a lot of
variety, including a Jamaica
soup of the day made daily and
served with either a Jamaican
style prepared garlic bread or
French bread. The only
restaurant that prepares dishes
such as chicken liver and port
pate, which is a smooth pate
served with salad and toast that
most locals are unfamiliar with.
