COLUMBUS RESTAURANT JAMAICA PEGASUS IN KINGSTON
Columbus is the only Italian
restaurant in Jamaica Kingston.
Located on the first floor of
the Pegasus Hotel, the Jamaican
restaurant boasts fine Italian
cuisine and décor. The look and
feel of Italy is invoked in the
restaurant with a choice of deep
jewel blue fabrics on the
chairs. The anti pasta table in
the far end of the restaurant is
also decorated in the deep blues
and also adds to the unique
Italian Jamaican look. Suspended
from the ceiling in the
restaurant are grapes that
remind the travelers from the
wine country and locals that
they are in an Italian setting.
The bulkhead of the restaurant
is painted in a warm deep yellow
representing the sun.
The Columbus restaurant has a ship's mast in the corner carved in
the traditional shape of a woman. The food and beverage manager at
the Pegasus Hotel remonstrated that very experienced staff members
serve you the customer. With a wide selection of Italian dishes the
restaurant most of the dishes are done flambé cooking in front of
the guests table. This is one of the only restaurants that employ
this method of preparing Jamaican food. The restaurant comes
complete with a full selection of wines. Serving this wide array of
wines by the glass or bottle the restaurant is superbly tailored for
the budget-conscience. The restaurant observes a strict dress code
where no shorts, tee shirts or sneakers are allowed.
The aim of the restaurant introduces people to an alternative venue.
The restaurant provides most of the locals with a change from the
ordinary dinners and Jamaican meals provided by other everyday
restaurants. Some of the great Italian Jamaican meals include, as an
appetizer, costini alla florentina which is actually Florentine
toast with chicken liver, anchovy and fresh cream. Though this
recipe does not sound delectable the taste of the dish is often
described as heavenly by the locals. Another favorite among visitors
is the panzanella di pomodoro which is actually tomato and bread
salad with olives, cucumbers, onion and basil. Antipasto, or the
famous soup Passato Di Cipolla or Jamaican onion soup. The Lasagna
Bolognese is also a favorite among the locals as it is made from
beef, along with, pollo con pepperoni e fungi or sautéed chicken
breast with sweet peppers and mushrooms. For dessert ice-cream and a
delicious soufflé.
